The other day I saw a recipe for cauliflower cakes (in German language) on the website of the organic grocery store. I came across this again a short time later elsewhere, which I found interesting because I was looking for new recipes for vegan burger alternatives anyway.

However, the recipe linked above is not vegan. It also contains potatoes. These are nightshade plants and I cannot tolerate them.

But since there was so much synchronicity here, I set about developing a vegan version without Solanaceae. And what can I say: it worked out great! But try it for yourself.

Vegan Cauliflower-Sweet Potato-Cheeze-Burgers

Ingredients:

For the sweet potato mass:

  • 500 g sweet potatoes
  • corn starch
  • salt, pepper
  • nutmeg
  • rosemary to taste

Tip: If you can tolerate nightshades, you can make it easy and use mashed potato as described in the original recipe. However, I personally find the taste of sweet potato in the burgers extremely delicious.

For the cooked muenster-style cheeze:

  • 125 g vegan yoghurt
  • 60 ml water
  • 165 ml melted coconut oil
  • 1 Tbsps. olive oil (we like Crete olive oil here)
  • 2½ Tbsps. corn starch
  • 1 Tbsp. low ester apple pectin
  • ½ Tbsp. miso paste
  • ½ tsp salt
  • ½ tsp turmeric powder

After preparation, measure out 150 g of the cheeze mixture for the recipe.

Tips: Instead of 2½ Tbsps. corn starch, you can also use 1½ Tbsps. tapioca starch and omit the olive oil. You can also use yeast flakes instead of miso paste.

Other ingredients:

  • 1 cauliflower
  • 3 tbsp dried nettle leaves
  • Salt or herb salt
  • Pepper
  • nutmeg
  • Oat flakes tender, ground – for breading
  • coconut oil for frying

Tips: The use of nettle leaves is optional. You can omit them or replace them with any dried herbs. If using fresh nettles or other herbs, I would use 1 handful of finely chopped herbs.

Method of Preparation:

Preparation of the sweet potato mass:

  1. Wash the sweet potatoes, cut into large pieces and place on a baking tray. Cook in the oven at 180 degrees. This takes about 30 minutes. When the sweet potatoes are cooked, the skin can be easily removed.
  2. While still hot, mash the sweet potatoes with a potato masher and leave to cool.
  3. Put the sweet potato mash in a bowl and lift out 1/4 of the mixture. Fill the hole with corn starch. This is to ensure that you always use the right amount of starch and that the mixture succeeds.
  4. Add the removed sweet potato mass back in, mix everything together and season well with salt, pepper, nutmeg and rosemary.
  5. Set aside.

Intermediate steps:

  1. While the sweet potatoes are cooking in the oven, cut the cauliflower into florets, blanch briefly and leave to cool slightly.
  2. Grind the tender oat flakes and set aside.
  3. After mashing the sweet potatoes, mince the cooled cauliflower florets very finely.
  4. After the sweet potato mash has cooled and the starch has been added, fold in the cauliflower mince, nettle leaves, salt, pepper and nutmeg and mix well.
  5. Set aside.

Preparation of cooked cheeze Münster-style:

  1. Mix the starch with the cold water until smooth.
  2. Mix the remaining ingredients except the apple pectin in a medium saucepan until smooth and homogeneous, then heat over medium heat, stirring constantly.
  3. When the mixture is hot, first add the apple pectin while stirring with a whisk and stir until smooth. Make sure that the mixture remains lump-free.
  4. Then continue stirring with a wooden spoon and add the water with the stirred-in starch.
  5. Continue stirring over medium heat until the mixture becomes very smooth, thick, sticky and shiny and begins to separate from the rim of the pot.
  6. Measure out 150 g of this mixture, add to the burger mixture and mix in well.
  7. Any leftover cheeze mass can be placed in a greased glass mould, left to cool to room temperature and then left in the fridge overnight to set. It is supposed to keep in the fridge for up to four weeks, but we always eat it before that.

Frying the burgers:

  1. Form small, flat burgers from the vegetable-cheeze mixture and roll them in the oatmeal.
  2. Heat the coconut oil in a frying pan and fry the breaded burgers on both sides.
  3. Done.

Tip: If you have ready-made fusible cheeze on hand, you can of course also use 150 g of it, in grated or finely chopped form. We made twice the amount of cheeze at the beginning and accidentally added it all to the burgers. Makes a great cheezeburger.

Vegetable fries taste good with CSC-burgers, but so does salad or you can eat them as a burger in a bun or as a sandwich topping.

The burgers are really delicious and can be reheated in the oven the next day. We also froze some and they can be reheated just as well in the oven

Some of you may have noticed: The sweet potato mixture is based on the recipe for pumpkin dumplings, which I shared before.

In the meantime, we tried this recipe with mushrooms, onions and garlic instead of cauliflower and pumpkin instead of sweet potatoes. We also had pumpkin fries made from the remaining pumpkin. This, too, is a delight for the palate and a perfect dish for Autumn.

The burgers are also delicious with nori flakes, grated carrot, onion, garlic and dill instead of cauliflower and parsnip instead of sweet potato. With this we had vegetable fries, homemade cucumber kimchi and salad with linseed oil.
